These borrowings may be inspiring chefs and tantalising new palates around the world, but what does it mean for Cantonese cuisine? In the face of the continued urbanisation of Hong Kong, and the city’s upcoming full integration with the mainland, some have expressed fear that Cantonese cuisine may be lost, or its authenticity diluted.
With international chefs now using elements of Cantonese cuisine in their own dishes, will this muddy the boundaries of Cantonese food, and threaten its existence or purity?
“People believe that it should be and only can be classic and traditional, while I believe that innovative thinking or contemporary style can bring in more variety and possibilities to Cantonese cuisine,” he says.
“I see many young talented Chinese chefs trying to bring in more ideas because they’ve seen the world, much more than what we saw when we were at their age 20 or even 30 years ago. And it’s not for chefs to say whet
her it’s the right approach or not – guests and the market will tell you.”
“Variety shouldn’t be the enemy of traditions. The market tends to look for new ideas or creations, but it doesn’t mean traditional style is diluted or less important, in fact, it makes classic dishes even more precious and significant,” he says. “At T’ang Court we stick to traditional recipes and techniques for guests who appreciate classic style, and we will continue to do so to keep the heritage.”
“Technical skills are very high in Cantonese cuisine, I’d say even more so than in Japanese or French. It’s difficult to make Cantonese dishes perfect,” says Tutak.

Peskin has never won a citywide race before. Some Chinatown business leaders feel blindsided having learned of Mayor London Breed’s plans through a tip from a staffer of their supervisor Aaron Peskin. Nancy Yu Law has a store about a block away from the chosen site and was busy with Lunar New Year festivities when she rushed to a meeting with the mayor within a half hour of learning about this plan.
“We were kind of surprised. How come we didn’t hear anything from anyone?” she said. “And we did give her a lot of questions because we have concerns, we don’t know exactly what kind of program it is. It’s the first of its kind in the nation according to what they say.”
Merchants who spoke to KRON4 believe that between the tourism and nightlife, the North Beach/Chinatown corridor is not an appropriate setting for people trying to get sober.
“Our tourists are not comfortable. They should be put somewhere else. A different location would be a better environment for them,” said Edward Siu, who president of the Chinatown Merchants United Association of San Francisco.

It is well known that lumber was pivotal in both the creation and growth of Madera County. The city of Madera even received its name from the industry. Between 1876 and 1933, lumber was harvested in the mountains and transported down the flume to the planing mill in Madera.
Throughout the life of Madera County’s lumber industry, three corporations succeeded one another in keeping the business alive. First there was the California Lumber Company, which built the first flume and then went bankrupt in 1878. Next came the Madera Flume and Trading Company, which ran the operation until the Madera Sugar Pine Company acquired its assets and began to improve them in 1899.
The Madera Sugar Pine Company revitalized the industry and soon created a need for additional workers. This was met with the influx of large numbers of Chinese laborers in and near the company town of Sugar Pine in the mountains. To house these workers, the company turned an area just below the sawmill into a Chinatown.

Thirty-four refugees from Vietnam have been resettled on Penghu (Pescadores) after being rescued from a desert island in the Spratly group in the South China Sea by a Chinese fishing boat.
