豬肝 is the original term. But in Cantonese, 肝 is pronounced like 乾 which means "dry" and is regarded as inauspicious. The opposite of 乾 (dry) is 潤 (wet). So a new word 膶 is coined, modelled after the form 潤 with a slight change of tone.
